One day, after walking on the beach, JB and I got inspired to make a Piña Colada drink with our freshly picked coconuts. The only mixed drink we’d had since we moved here was a coke & rum (also known here as a Nica Libre), so we thought it’d be a real treat. We had all of the organic ingredients just down the street from us so we knew it would be the freshest Piña Colada we’ve ever had. Below we share our very own Nica Piña Colada recipe so that you too can have your own little refreshing taste of the tropics.
You will need:
1 fresh, raw coconut
Coconut water, from the raw coconut (not from the can or box, this is very important)
1 fresh pineapple
1 Bottle of White 4 Year Flor de Caña
Optional additions for alternative flavors:
Hunt for your coconut. Please see hunting for coconuts article for the complete step by step process.
Slice your coconut in half. Two halves is the best as these will make for terrific cups when the drink is ready to be consumed
Drain the coconut of all the water and put into a container (bowl, cup, etc… doesn’t matter)
Grate the coconut so that you have fresh shavings that will be blended into the freshest Piña Colada you’ve ever had.
Cut the pineapple into chunks.
Place ice into blender, along with coconut shavings, coconut water, and pineapple chunks
Pour the Flor de Caña rum in with the desired amount according to how stiff you like your drink. We used about half of a liter for a batch that served about 6 people. If you want to pour it all in there though, by all means, have at it.
BLEND!!! Make sure to really do it for a while until it’s been finely blended as the raw ingredients tend to allow for a chuncky drink. Especially the raw coconut shavings.
Taste, add, dilute, subtract. Adding more coconut water makes the drink more liquid and less like a smoothie. This natural Pina Colada isn’t as sweet as your typical drink from the bar because there is no added sugar or syrups. Add more rum if you’d like. Add mangos, lime or bananas if you want different flavors. Go crazy.
Pour your delicious beverage into those coconut halves and enjoy. On the beach.
